Vietnamese Loaded Fries

A quick and easy snack for your game day spread that takes just 13 minutes to prepare! These Vietnamese loaded fries are topped with 3 different sauces, peanuts, and cilantro. They’re a new way to serve up French fries that everyone is going to LOVE! You can’t eat just one!
Say hello to animal style fries done Vietnamese style!
These loaded fries are drizzled with hoisin sauce, sriracha, garlic mayo, then topped with crunchy peanuts and fresh cilantro. They look like a hot mess on a plate (these pictures are hideous!) but they taste oh, so delicious! Vietnamese fries is what they’re called at the local bar that serves these. I don’t know why they’re called what they’re called, but they are. We’ll get to these loaded fries in just a few seconds though.
This past Saturday we helped our neighbors move into their new place. Let’s just say they didn’t go very far. Just a floor below where they used to be. Not a bad move at all. We had the whole thing wrapped up and set up in about 9 hours or so. Guess what? We’ve got another one of these coming up in less than a month. Guess who’s moving? We are! Yippee! Thank god for that. Currently, i’m taking these food pictures in our bedroom. Yup. You read that right. Next to our bed on a little table that i’ve set up by the window, because that’s the ONLY place where we get enough sunlight. <– I’m itching to get into our 2 bedroom where I’ll have an office + a studio for pictures. Absolutely. Cannot. Wait.
The first time I had these loaded fries was on my birthday this past December. Friends of ours suggested Bar Boheme for some late night munchies. I was promised good, greasy food but boy, I wasn’t expecting these lovelies! I’m told that the Boheme is actually famous for these fries. It’s so simple but man are they addicting!
To make these vietnamese loaded fries, you only need a couple of ingredients. Let’s start with potatoes. I’m using ‘fast food style’ french fries that say EXTRA CRUNCHY nice and big on the bag. These remind me of McDonalds fries, dare I say these are better? I baked mine to keep this recipe healthier. Feel free to fry them. They’ll obviously be more delicious that way.
You’re also going to need chopped peanuts for this recipe. Don’t worry about going to the store to find these. If you’ve got peanuts at home, just give them a couple of pulses in the food processor.
Let’s talk sauces, you need 3 of them.
- Hoisin Sauce
- Sriracha
- Garlic Mayo <– this one comes in a squeeze bottle.
I used store bought hoisin and sriracha. The garlic mayo i’ve made at home myself. You can purchase your garlic mayo if your making this for a large party or if you just happen to love garlic mayo. Also, I suggest a couple of these to make your life a lot easier. Since they come in a set of three, it’s exactly what you need. Other than this, just a handful of roughly chopped cilantro.
You’re going to load up these fries in a big pile on a plate and drizzle them with the sauces, chopped peanuts and cilantro. How easy is that? It takes a total of 13 minutes to pop out these vietnamese fries.
I’ve served these loaded fries exactly how they do at the bar. They don’t even bother with a plate. These come on a flat sheet of white cardboard! Just loaded with sauce drizzle everywhere like a hot mess and tons of chopped peanuts tossed on. Cilantro roughly chopped and tossed all over. Animal style fries. Just with a Vietnamese twist.

Vietnamese Loaded Fries

Ingredients
- 13 oz (1/2 bag) of 'fast food style' EXTRA CRUNCHY french fries (such as Ore Ida)
- 1/4 cup Hoisin sauce
- 3 teaspoons Sriracha Sauce
- 1/4 cup Garlic Mayo
- 1/4 cup chopped salted, roasted peanuts (see notes)
- 3 tablespoons cilantro, roughly chopped
Garlic mayo:
- 1/4 cup mayonnaise
- 1 teaspoon milk
- 1 teaspoon garlic powder
Instructions
- Bake the fries according to package directions of fry them. While the fries are frying, chop the cilantro and prepare the garlic mayo. To make the garlic mayo place the mayo, milk, and garlic powder in a bowl and stir to combine. Pour the garlic mayo into one of these to make it easier to drizzle.
- When the fries are done, season with a pinch of salt if desired. Pile them on a long oval or rectangular plate. Drizzle with hoisin, sriracha, and garlic mayo. Start with 2 teaspoons of sriracha and adjust to preference. Top with crushed peanuts and chopped cilantro. Serve warm.
Notes
To make chopped peanuts: pulse 1/4 cup of salted, roasted peanuts through the food processor a few times.

I made this recipe using tater tots from Trader Joe’s. I prepared them according to the bag and placed on a large platter. They were a great appetizer for a dinner party I had and the tots were a great carrier for all of the ingredients. Great recipe!!
